Let’s Make Impossible to Resist Chipotle Cheddar Cheese Sourdough Crackers
These crackers are impossibly irresistible. Why? They are delicious, that’s why! They taste salty, slightly spicy, cheesy and with a sourdough kick. But, no need to believe me, try making them yourself and you will soon understand the irresistibility of these Cheddar Cheese Sourdough Crackers.
Inspiration for These Cheddar Cheese Crackers
I love a good cracker. They are fantastic on a charcuterie board, as a snack, as an addition to soup or chile, or in a lunchbox. Bottom line, they are super versatile! When I was a child I ate store bought cheese crackers. However, as an adult, I now read labels. Concerned over the prolific inclusion of preservatives, dyes, sugar, excessive salt, and unnatural or GMO products in mainstream foods, I stopped buying grocery store snacks. Opting instead to make my family’s food in our own kitchen. The benefit to making our own food is we always know what goes into our bodies. So, these crackers are my answer to store bought cheese crackers. Don’t like cheddar? Try making Italian Herb Crackers instead.
Why Use Sourdough Starter in these Cheddar Cheese Crackers?
If you bake with sourdough, then you have an excessive amount of discard. The option is to dump it in the trash, use it in the compost pile, or bake something else with it. Since so many people started their own sourdough starters during COVID pandemic, it seems natural to have a few easy recipes at the ready to use up the starter. Did you cultivate a starter recently? Choose a high quality, finely shredded, sharp cheddar cheese as this will produce the best cheese flavor in the crackers. I prefer the cheddar cheese with the natural orange color as I think it gives the final product an attractive finish. However, in a pinch, a sharp white cheddar cheese, or any cheddar cheese will do, just make sure it’s finely shredded (by hand or store bought).

Cheddar Cheese Sourdough Crackers
Equipment
- Measuring Cups
- mixing bowl
- Rolling Pin
- Pastry Wheel, pizza cutter, or knife
- Sheet Pan
- Silicone mat or parchment paper
Ingredients
- 1 Cup Unfed Sourdough Starter for this recipe I specifically like sourdough starter made with white flour.
- 1-1¼ Cup Bread Flour
- ¼ Cup Mild Flavored Oil like canola, grapeseed, etc.
- 1 tsp Sea Salt
- 1 Cup Finely Shredded Sharp Cheddar Cheese I use the orange cheddar because I like the color in the final product
- 1/4 tsp Chipotle Chili Pepper ground
- Fine Sea Salt for sprinkling on top
Instructions
- Measure all your ingredients.
- Preheat oven to 350 F or 175 C degrees.
- Mix all ingredients together in one bowl until mix is crumbly like pie crust.
- Dump mix onto a work surface.
- Knead a few times to make a ball.
- Cut ball in half.
- Roll out half the dough to slightly more than the thickness of a coin.
- Using a pastry wheel, pizza wheel, or knife, cut the dough in desired shape/size.
- Carefully lift the crackers and place onto a prepared baking sheet. No need to spray the silicone mat or parchment paper. Crackers can be placed close together (but not touching).
- Spray the tops of the crackers with spray oil. Sprinkle with salt (and more chipotle powder if desired).
- Bake for 10 minutes; Turn pan 180°. Bake for 5-10 minutes longer until crackers are golden brown.
- Repeat with second half of the dough.
- Allow to cool for 10 minutes and serve.
- Store uneaten crackers in airtight container for up to three days.

What an awesome recipe to make the sourdough starter. A brilliant answer for those times when you know you should be making good use of it but don’t really feel like making bread. The flavours in this were amazing and it will be made again. My family adored these and there was really no need to worry about keeping them fresh for a few days. They didn’t last that long. 🙂
