What is Sourdough Discard?

Sourdough discard is what you remove from your sourdough starter before you “feed it”, also called “refresh it.” If you do not have a sourdough starter or want to learn more about it, refer to my ebook on how to create a starter from scratch, The Sourdough Tutor. I have a rye sourdough starter that I feed once or twice a week. I always keep 300 grams of starter on hand. When I refresh it, I remove 200 grams of discarded starter and put it in a separate storage container and place it in the refrigerator. I then feed my starter in a 1:1:1 proportion (100 g starter + 100 g water + 100 g flour) and let it double for 6-8 hours at room temperature and then I bake a gorgeous sourdough bread.

Now What About Those Delicious Apple Cider Waffles?

When I want to make Apple Cider Waffles, I pull the starter from the refrigerator and use it immediately in this recipe (no need to let it warm up). This is a simple recipe to make:

#1 Prepare the Apple Cider Reduction.

#2 Mix Wet Ingredients together.

#3 Mix in the Sourdough Starter.

#4 Mix in the Dry Ingredients.

Batter done. Super easy. I bake these in my electric waffle maker. It has four molds so I make four waffles at a time. This recipe makes 8 large or 10 small waffles. It takes about 5 minutes to bake each round of waffles. So, about 10 minutes total to bake these.

Why Use an Apple Reduction and What is it?

I chose to use an apple reduction in this recipe in order to really increase the apple flavor. The combination of apple sauce and apple cider gives these waffles an extra flavor boost. Besides the flavor boost, the inclusion of apple cider and apple sauce adds to the moistness in these waffles. So, the final product is a moist and flavorful waffle!

A reduction is a liquid that has been simmered, thus concentrating the flavor and making it thicker. To make the apple reduction for this recipe, simply simmer the apple sauce and the apple cider together in a saucepan until is is reduced by 2/3. Then, measure out 180 g of the reduction to include in the waffle recipe for intense flavor!

Serving Suggestion

I suggest you serve these hot off the waffle press. They are so light and airy that you and/or your family will absolutely love them. I serve mine with maple syrup, butter and a sprinkling of cinnamon sugar. These remind me of apple cider donuts from Mann’s Orchards from my apple picking days as a child. Such a winning flavor, apple with spices!

Ingredients
  

Apple Reduction

  • 113 grams Apple Sauce (4 oz) home made or store bought work fine
  • 400 grams Apple Cider (1 ¾ cups) 100% apple juice can be substituted

Waffles

  • 180 grams Apple Reduction (made from the two ingredients above, see instructions)
  • 40 grams Melted Butter
  • 1 ea Egg (large)
  • 4 T Maple Syrup
  • 40 grams Milk
  • tsp Vanilla Extract
  • 130 grams Sourdough Discard
  • 180 grams Whole Wheat Pastry Flour
  • ¾ tsp Baking Soda
  • ¼ tsp Sea Salt
  • tsp Cinnamon
  • ¼ tsp Nutmeg
  • ½ tsp Cardamom

Toppings

  • Cinnamon Sugar
  • Butter
  • Maple Syrup

Instructions
 

Apple Cider Reduction

  • Pour Apple Cider and applesauce into a pan. Heat on medium heat. Simmer until reduced by two thirds (will become thicker).

Waffles

  • Preheat your waffle maker. (For mine, I just plug it in and leave the lid closed to preheat.)
  • Measure all ingredients.
  • In a bowl, mix all wet ingredients with a hand whisk.
  • Add sourdough starter and mix thoroughly with a hand whisk.
  • Measure and stir all dry ingredients together in a separate bowl.
  • Add dry ingredients to wet ingredients; mix thoroughly.
  • Cook according to your waffle maker's instructions.
  • I put the batter into a preheated waffle maker, add 1/3 cup of batter to each waffle form, close the top, and wait for about 5 minutes until the orange light turns off.
  • Remove waffles and serve with butter, maple syrup and cinnamon sugar. Enjoy!
